Explore sysinfo's new GPU API when it releases

With GuillaumeGomez/sysinfo#1678, it looks like I can drop a bunch of manual GPU work/dependencies, and a lot more things will work cross-platform.

When sysinfo's GPU API lands, it may be worth integrating it behind a backend capability layer first. That would let bottom compare sysinfo-provided GPU metrics with the current manual collectors, keep fallbacks for unsupported platforms, and avoid dropping vendor-specific data before parity is understood.

Yeah, I was going to do this fairly cautiously. There are some things I wouldn't be surprised if it doesn't support, and I'll likely be using both for at least a while (similar to how I currently do general data collection alongside sysinfo). On the flip side, from what I've seen so far, it also supports a much wider selection of GPU targets than what I currently support, so that should be nice too.
